Description
Coltsfoot (Tussilago farfara) is a perennial plant whose flowers, the first of spring, appear before the leaves.
These flowers have a pleasant aromatic flavour.
Coltsfoot has been used since ancient times as an expectorant remedy. This use earned it its name, from the Latin “tussis”, cough and “ago”, hunting.
Our flowers were harvested during the first sunny days of spring to obtain beautiful open yellow flower heads, then dried directly after harvest.
The infusion of coltsfoot flowers, a teaspoon for 10 min. in hot water, is sweet and of a beautiful apple green.
It is delicious with a little honey.
